Ew! What’s that Smell?

Chinese cuisine is home to many delicious dishes: 炒饭,饺子,粥 (fried rice, dumplings, rice porridge). However, one particular dish has an odor as strong as its taste.

Stinky tofu (臭豆腐)is a popular snack at night markets or restaurants. Known for its strong smell, stinky tofu is popular all over China.

The history behind stinky tofu is actually quite fascinating. According to legend, a scholar by the name of 王致和 relied on selling tofu after numerous failed experiments. After keeping the tofu for too long, it began to ferment. Instead of throwing it away, 王致和 decided to taste it. To his surprise, it was extremely delicious. He began to sell it in his stores. By gaining popularity, he even served it at the Qing Dynasty palace.

Now, the process of making 臭豆腐 is by far more sanitary. First, a brine is made. This brine usually consists of herbs, bamboo shoots, dried vegetables, and dried meats. The brine is left to sit for a few months before use. After the brine has matured, tofu is added to be marinated for a few days.

Stinky tofu can be cooked a variety of ways! Served cold, in hot pot, barbequed, or even as a side dish for bread! Though it sounds disgusting, you never know until you try!
